Cinnamon-Sugar Doughnuts with Dark Chocolate Ganache

Ingredients
- 2 cups all-purpose flour
- 2 tbsp granulated sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup unsalted butter
- 3/4 cup milk
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup granulated sugar
- 1/2 tsp ground cinnamon
- 1/2 cup dark chocolate chips
- 1/4 cup heavy cream
Instructions
- Step 1: In a large bowl, whisk together 2 cups all-purpose flour, 2 tbsp granulated sugar, 1 tsp baking powder, and 1/2 tsp salt. In a separate bowl, combine 1/4 cup melted unsalted butter, 3/4 cup milk, 1 large egg, and 1 tsp vanilla extract. Pour wet ingredients into dry and stir until just combined (do not overmix).
- Step 2: Cover the bowl and let rest at room temperature for 30 minutes. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Step 3: Roll the dough to 1/2 inch thickness and cut into 2-inch circles using a biscuit cutter. Place on the baking sheet and let rest for 10 minutes.
- Step 4: Bake for 12-14 minutes until golden brown around the edges. Remove from oven and let cool for 5 minutes.
- Step 5: Mix 1/2 cup granulated sugar and 1/2 tsp ground cinnamon in a shallow dish. Roll warm doughnuts in the mixture while still hot.
- Step 6: Microwave 1/2 cup dark chocolate chips and 1/4 cup heavy cream together for 1 minute, then stir until smooth. Let cool for 5 minutes until thickened but still pourable, then drizzle over doughnuts.
