Citrus-Bright Panna Cotta with Aperol Syrup

Ingredients
- 1 cup heavy cream
- 1/2 cup whole milk
- 1/4 cup Aperol
- 1.5 tsp gelatin
- 3 tbsp sugar
- 1/2 tsp vanilla extract
Instructions
- Step 1: Sprinkle gelatin over 1/4 cup cold water in a small bowl; let sit for 5 minutes to bloom.
- Step 2: In a saucepan, combine heavy cream, whole milk, sugar, and Aperol. Heat over medium-low heat until sugar dissolves and mixture is warm (do not boil), stirring gently.
- Step 3: Remove from heat and stir in bloomed gelatin until fully dissolved, then add vanilla extract.
- Step 4: Strain the mixture through a fine-mesh sieve into a clean bowl to remove any lumps.
- Step 5: Pour into 4 ramekins or glasses, then refrigerate for at least 4 hours until set and firm to the touch.
