Citrus-Dill Cod with Bitter-Sweet Glaze
Flaky cod fillets coated in a tangy glaze made with Aperol and dill, finished with a quick pan sauce for a light dinner.

Ingredients
- 4 (6 oz each) cod fillets
- 2 tbsp Aperol
- 1 (juice and zest) lemon
- 2 tbsp (chopped) fresh dill
- 1 tbsp olive oil
- 1 clove (minced) garlic
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Pat cod fillets dry with paper towels, then season both sides with 1/2 tsp salt and 1/4 tsp black pepper.
- Step 2: Heat 1 tbsp olive oil in a non-stick skillet over medium-high heat until hot. Add cod skin-side down (if skin-on) and cook for 3 minutes until golden, then flip and cook for 2 more minutes.
- Step 3: While cod cooks, whisk together 2 tbsp Aperol, 1 tbsp lemon juice, 1 tsp lemon zest, 1 minced garlic clove, and 2 tbsp chopped fresh dill in a small bowl.
- Step 4: Remove cod from skillet, leaving drippings. Add the Aperol mixture to the skillet and simmer for 2 minutes until slightly thickened and glossy.
- Step 5: Return cod to the skillet, spooning the glaze over the top. Cook for 1 more minute to reheat and absorb flavors, then transfer to plates and drizzle with any remaining sauce.
