Citrus-Ginger Glazed Salmon with Snap Peas

Ingredients
- 4 (6 oz each) salmon fillets
- 1 tbsp grated fresh ginger
- 3 tbsp orange juice
- 1 tbsp rice vinegar
- 1 tsp honey
- 1 cup trimmed snap peas
- 1 tsp sesame oil
- 1 tbsp soy sauce
- 1 tsp sesame seeds
Instructions
- Step 1: Pat salmon fillets dry with paper towels and season lightly with salt and pepper. Heat 1 tsp sesame oil in a nonstick skillet over medium-high heat until shimmering, then add salmon skin-side down and cook for 4 minutes until golden.
- Step 2: Flip salmon and spoon 1/4 cup water around the edges. Add grated ginger, orange juice, rice vinegar, honey, and soy sauce to the skillet, bringing to a gentle simmer for 2 minutes until slightly thickened.
- Step 3: Add snap peas to the skillet, tossing to coat in the glaze, and cook for 3 minutes until peas are bright green and crisp-tender. Transfer salmon to plates and spoon the pea glaze over top.
- Step 4: Sprinkle with sesame seeds and serve immediately with extra sauce drizzled on the side.
