Citrus-Herb Infusion with Tangerine Peel

  1. Step 1: Place 1 tangerine peel (zest only, avoiding white pith) and 2 sprigs fresh mint and 2 sprigs fresh basil in a heatproof glass.
  2. Step 2: Pour 1 cup (240ml) boiling water over the herbs and peel, cover, and steep for 10 minutes.
  3. Step 3: Strain the infusion into a serving glass, discarding herbs and peel; stir in 1 tbsp honey if desired.
  4. Step 4: Add 1/2 cup (120ml) cold water to cool slightly and serve warm or chilled.
