Citrus-Scented Panna Cotta with Verbena

  1. Step 1: In a small bowl, sprinkle 2 tsp gelatin over 2 tbsp cold water and let bloom for 5 minutes.
  2. Step 2: In a saucepan, combine 1 cup heavy cream, 1/2 cup whole milk, 1/4 cup granulated sugar, and 1 tbsp lemon zest. Heat over medium heat, stirring until sugar dissolves and mixture is warm (160°F).
  3. Step 3: Remove from heat, add bloomed gelatin, and stir until dissolved. Stir in 1/4 cup chopped fresh verbena and 1 tbsp lemon juice.
  4. Step 4: Strain mixture through a fine-mesh sieve into a bowl to remove verbena bits. Divide evenly among 4 ramekins.
