Classic Buttermilk Pancakes

Ingredients
- 1 1/2 cups All-purpose flour
- 2 tsp Baking powder
- 1/2 tsp Baking soda
- 1/2 tsp Salt
- 2 tbsp Sugar
- 1 1/4 cups Buttermilk
- 1 large Egg
- 2 tbsp Butter
- 1 tsp Vanilla extract
- as needed Maple syrup
Instructions
- Step 1: In a large bowl, whisk 1 1/2 cups all-purpose flour, 2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt, and 2 tbsp sugar.
- Step 2: In a separate bowl, beat 1 large egg, then stir in 1 1/4 cups buttermilk, 2 tbsp melted butter, and 1 tsp vanilla extract.
- Step 3: Pour wet ingredients into dry ingredients and stir until just combined (do not overmix). Let rest 5 minutes.
- Step 4: Heat a non-stick skillet over medium heat (350°F). Lightly grease with butter. Pour 1/4 cup batter per pancake and cook 2-3 minutes until bubbles form and edges set. Flip and cook 1-2 minutes until golden brown.
- Step 5: Serve hot with maple syrup.
