Classic Mofongo with Garlic and Pork Cracklings
A traditional Puerto Rican side dish of mashed green plantains mixed with garlic, pork cracklings, and seasonings, served as a hearty accompaniment.

Ingredients
- 4 medium, peeled and cut into 1-inch chunks green plantains
- 3 tbsp vegetable oil
- 4 cloves, minced garlic
- 1/2 cup, finely chopped pork cracklings
- 1/2 tsp salt
- 1/4 cup (optional) chicken broth
Instructions
- Step 1: Place 4 medium peeled and 1-inch cut green plantain chunks in a large pot, cover with water, and bring to a boil; simmer for 15 minutes until tender, then drain and set aside.
- Step 2: Heat 3 tbsp vegetable oil in a large skillet over medium heat. Add 4 minced garlic cloves and sauté for 1 minute until fragrant.
- Step 3: Add the drained plantains and 1/2 cup chopped pork cracklings to the skillet. Mash with a potato masher until smooth and well combined, adding 1/4 cup chicken broth if too dry.
- Step 4: Season with 1/2 tsp salt, mixing until evenly distributed. Serve warm as a side.
