- 1/2 cup, diced mango
- 1 tbsp maple syrup
- 1/2, zested lime
Instructions
- Step 1: In a bowl, whisk 1/2 cup chia seeds with 1 can coconut milk, 1 tbsp maple syrup, and 1/2 tsp lime zest until fully combined. Cover and refrigerate for at least 4 hours or overnight, stirring once after 30 minutes to prevent clumping.
- Step 2: Divide the chia seed mixture evenly between two glasses. Top with 1/4 cup fresh raspberries and 1/4 cup diced mango, pressing gently to create layers.
- Step 3: Refrigerate for another 30 minutes to allow flavors to meld. Before serving, sprinkle with additional lime zest and a few extra raspberries for visual appeal.
