- Step 1: Preheat oven to 375°F; pat 1.5 lb pork loin dry and rub with 2 tbsp finely ground coffee, 1 tsp smoked paprika, and 1 tbsp olive oil, pressing gently to adhere.
- Step 2: Place pork on a wire rack over a baking sheet; roast for 30 minutes until internal temperature reaches 145°F, then let rest 10 minutes.
- Step 3: While pork rests, heat a skillet over medium heat; add 3 minced garlic cloves and 4 oz chopped kale, sautéing for 4 minutes until kale wilts and turns deep green.
- Step 4: Stir in 1 tbsp lemon juice and 1/4 cup water; cook for 2 more minutes until liquid reduces slightly and greens are tender but vibrant.
- Step 5: Slice pork loin and serve with the roasted kale mixture, drizzling pan juices from resting pork over the top.
