Colcannon with Smoked Gouda and Chives

  1. Step 1: Place 2 lbs peeled potato cubes in a pot, cover with cold water, and add a pinch of salt.
  2. Step 2: Bring to a boil over high heat, then reduce to medium and simmer 15-20 minutes until potatoes are very tender.
  3. Step 3: Drain potatoes and return to pot.
  4. Step 4: Add 1/4 cup unsalted butter and 1/2 cup milk, then mash until smooth and creamy.
  5. Step 5: Stir in 1 cup shredded green cabbage, 1/4 cup chopped chives, and 1/2 cup shredded smoked Gouda cheese.
  6. Step 6: Continue mashing for 2 minutes until cabbage wilts and cheese melts completely.
