Creamy Avocado-Cauliflower Mash with Smoked Paprika

Ingredients
- 1 large head, cut into florets cauliflower
- 1 ripe avocado
- 2 tbsp unsalted butter
- 1/2 tsp smoked paprika
- 2 tbsp finely chopped chives
- 1/4 tsp sea salt
- 1/8 tsp black pepper
Instructions
- Step 1: Place cauliflower florets in a large pot, cover with water, and bring to a boil over high heat. Cook for 12-15 minutes until fork-tender, then drain thoroughly.
- Step 2: Transfer drained cauliflower to a food processor, add avocado, butter, smoked paprika, 1/4 tsp salt, and 1/8 tsp black pepper. Blend until smooth, scraping down the sides as needed, adding 1-2 tbsp water if too thick.
- Step 3: Transfer mash to a serving bowl and stir in 1 tbsp chopped chives. Taste and adjust seasoning with additional salt or pepper if needed.
- Step 4: Serve warm, garnished with remaining 1 tbsp chives, and pair with grilled chicken or salmon for a complete meal.
