Creamy Carrot-Infused Macaroni with Hidden Spinach

- 2 medium, grated carrots
- 2 cups, packed fresh spinach
- 3 tbsp unsalted butter
- 3 tbsp all-purpose flour
- 2 cups whole milk
- 1.5 cups shredded cheddar cheese
- 1 tsp garlic powder
Instructions
- Step 1: Bring 4 quarts of salted water to a boil in a large pot. Add 12 oz elbow macaroni and cook for 8 minutes until al dente, then drain and set aside.
- Step 2: While pasta cooks, melt 3 tbsp unsalted butter in a medium saucepan over medium heat. Add 2 medium grated carrots and cook for 4 minutes until softened, stirring frequently.
- Step 3: Whisk in 3 tbsp all-purpose flour and cook for 1 minute until golden, then gradually whisk in 2 cups whole milk until smooth. Add 2 cups packed fresh spinach and cook for 3 minutes until wilted and spinach is fully incorporated.
- Step 4: Stir in 1.5 cups shredded cheddar cheese and 1 tsp garlic powder until melted and sauce thickens to coat the back of a spoon. Remove from heat.
- Step 5: Combine the drained pasta with the sauce, stirring until every strand is coated. Let sit for 2 minutes before serving to allow flavors to meld.
