Crisp-Cooked Lemon-Herb Chicken with Sautéed Green Beans

Ingredients
- 2 (6 oz each) boneless skinless chicken breasts
- 2 tbsp olive oil
- 1 (zested and juiced) lemon
- 2 (minced) garlic cloves
- 1 tsp fresh thyme leaves
- 1 cup (trimmed) green beans
- 1 tbsp unsalted butter
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Pat chicken breasts dry with paper towels and season both sides with 1/4 tsp salt and 1/8 tsp black pepper. Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering.
- Step 2: Sear chicken for 4-5 minutes per side until golden brown and cooked through (internal temperature 165°F), then transfer to a plate and tent with foil.
- Step 3: Add remaining 1 tbsp olive oil to the skillet, then add green beans and sauté for 3 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
- Step 4: Return chicken to the skillet, add lemon zest, juice, and thyme, then simmer for 2 minutes until sauce thickens slightly and coats the chicken.
