Crisp-Cooked Salmon with Dill-Yogurt Sauce

Ingredients
- 4 (6 oz each) salmon fillets
- 1 lemon
- 2 tbsp olive oil
- 1/2 cup plain Greek yogurt
- 3 tbsp fresh dill
- 1 clove garlic
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Pat salmon dry with paper towels. Season both sides with salt and pepper. Heat 1 tbsp olive oil in a skillet over medium-high heat until shimmering.
- Step 2: Place salmon skin-side down in skillet and cook undisturbed for 6-7 minutes until skin is crisp and golden. Flip and cook 3-4 minutes more until opaque throughout.
- Step 3: While salmon cooks, whisk yogurt, minced garlic, 2 tbsp dill, lemon zest, and a pinch of salt until smooth.
- Step 4: Transfer salmon to plates, drizzle with yogurt sauce, and garnish with remaining dill and lemon slices. Serve immediately with steamed asparagus.
