  1. Step 1: Peel and dice 1 lb sweet potatoes into 1/2-inch cubes. Heat 2 tbsp olive oil in a large nonstick skillet over medium-high heat until shimmering.
  2. Step 2: Add the diced sweet potatoes and 1 medium finely diced yellow onion to the skillet. Season with 1/2 tsp sea salt and 1/4 tsp black pepper. Cook, stirring occasionally, for 12-15 minutes until potatoes are golden brown and tender when pierced with a fork.
  3. Step 3: Stir in 1/4 cup chopped fresh sage leaves during the last 2 minutes of cooking until fragrant and slightly wilted. Remove from heat and serve immediately while crispy.
