Crisp-Glazed Sweet Potato Hash with Sage

Ingredients
- 1 lb sweet potatoes
- 2 tbsp olive oil
- 1 medium, finely diced yellow onion
- 1/4 cup, chopped fresh sage leaves
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Step 1: Peel and dice 1 lb sweet potatoes into 1/2-inch cubes. Heat 2 tbsp olive oil in a large nonstick skillet over medium-high heat until shimmering.
- Step 2: Add the diced sweet potatoes and 1 medium finely diced yellow onion to the skillet. Season with 1/2 tsp sea salt and 1/4 tsp black pepper. Cook, stirring occasionally, for 12-15 minutes until potatoes are golden brown and tender when pierced with a fork.
- Step 3: Stir in 1/4 cup chopped fresh sage leaves during the last 2 minutes of cooking until fragrant and slightly wilted. Remove from heat and serve immediately while crispy.
