Crispy Lemon-Garlic Chicken Thighs

Ingredients
- 4 oz chicken thighs
- 1 tbsp olive oil
- 2 cloves garlic
- 1/2 lemon
- 1/4 tsp sea salt
- 1/8 tsp black pepper
- 1 tsp fresh rosemary
Instructions
- Step 1: Pat 4 oz chicken thighs dry with paper towels. Season both sides with 1/4 tsp sea salt and 1/8 tsp black pepper.
- Step 2: Heat 1 tbsp olive oil in a skillet over medium-high heat until shimmering.
- Step 3: Add chicken thighs skin-side down and cook undisturbed for 8-10 minutes until golden brown and crispy.
- Step 4: Flip chicken and cook for 5 more minutes until internal temperature reaches 165°F (74°C).
- Step 5: Remove chicken from pan. Add 2 minced garlic cloves and cook for 30 seconds until fragrant.
- Step 6: Squeeze juice from 1/2 lemon over chicken, then sprinkle with 1 tsp fresh rosemary.
