Crispy Shrimp and Okra Fritters with Lime Aioli

- 12 oz shrimp
- 1 cup okra
- 1/2 cup all-purpose flour
- 2 tbsp cornstarch
- 1/4 cup fresh cilantro
- 2 tbsp lime juice
- 1 clove garlic
- 1 tbsp lemon juice
- 1/4 cup mayonnaise
- 1/4 cup coconut oil
Instructions
- Step 1: Peel and devein 12 oz shrimp, then chop into 1/2-inch pieces. Trim and thinly slice 1 cup okra. In a bowl, combine shrimp, sliced okra, 1/2 cup all-purpose flour, 2 tbsp cornstarch, 1/4 cup fresh cilantro, 2 tbsp lime juice, and 1 minced garlic clove. Mix until fully incorporated.
- Step 2: Heat 1/4 cup coconut oil in a skillet over medium heat until shimmering. Scoop 1/4 cup of the mixture per fritter, flattening slightly. Fry for 3-4 minutes per side until golden brown and crispy, turning once.
- Step 3: While fritters cook, whisk 1/4 cup mayonnaise with 1 tbsp lemon juice and 1/4 cup chopped cilantro to make the aioli. Serve hot fritters with aioli on the side, ensuring the aioli is cool before serving.
