- 8 oz bone-in, skin-on chicken thighs
- 1 tbsp olive oil
- 1/2, thinly sliced lemon
- 1 tsp finely chopped fresh thyme
- 2 cloves, minced garlic
- 1/4 tsp sea salt
- 1/8 tsp black pepper
Instructions
- Step 1: Pat chicken thighs dry with paper towels. Season both sides with 1/4 tsp sea salt and 1/8 tsp black pepper.
- Step 2: Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering. Place chicken skin-side down and cook undisturbed for 10 minutes until skin is deeply golden and crispy.
- Step 3: Flip chicken, add lemon slices and minced garlic, and cook for 5 more minutes until internal temperature reaches 165°F (74°C). Sprinkle with 1 tsp chopped thyme before serving.
