  2. Step 2: Add 1/4 cup packed fresh mint leaves, 2 tbsp extra virgin olive oil, 1 tbsp lemon juice, and 1/2 cup cold water to the blender.
  3. Step 3: Blend on low speed for 30 seconds, then increase to high for 60 seconds until completely smooth and chilled, scraping down sides as needed.
  4. Step 4: Strain through a fine-mesh sieve into a bowl to remove any fibrous bits, discarding solids.
