Cumin-Spiced Grain Salad with Lemon Dressing

Ingredients
- 1 cup uncooked quinoa
- 2 cups water
- 1 tbsp olive oil
- 1/2 cup diced red bell pepper
- 1/2 cup diced cucumber
- 1/4 cup finely sliced red onion
- 2 tbsp lemon juice
- 1/2 tsp ground cumin
- 1 tbsp chopped dill
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Rinse quinoa under cold water, then combine with water in a pot. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed and quinoa is fluffy.
- Step 2: In a small bowl, whisk together lemon juice, ground cumin, salt, black pepper, and olive oil to form a dressing.
- Step 3: While quinoa cooks, toss diced red bell pepper, cucumber, and red onion in a bowl. Once quinoa is cooked, let it cool for 5 minutes, then add to the vegetable mixture.
- Step 4: Pour dressing over the salad, toss gently until evenly coated, and sprinkle with fresh dill before serving.
