Deep Chocolate Flourless Cake

- 8 oz, chopped dark chocolate
- 1/2 cup, melted unsalted butter
- 4 large, separated eggs
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 2 tbsp cocoa powder
Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
- Step 2: Melt 8 oz chopped dark chocolate and 1/2 cup melted unsalted butter together in a heatproof bowl set over simmering water, stirring until smooth. Remove from heat.
- Step 3: Whisk egg yolks with 1/2 cup granulated sugar and 1 tsp vanilla extract until pale and thick, about 3 minutes. Gently fold into the melted chocolate mixture.
- Step 4: In a separate bowl, beat egg whites until soft peaks form. Gradually add 2 tbsp cocoa powder and beat until stiff peaks form.
- Step 5: Fold 1/3 of the egg white mixture into the chocolate batter, then gently fold in the remaining egg whites. Pour into the prepared pan and smooth the top. Bake for 25-28 minutes until edges are set but center still jiggles slightly.
