Deep-Dish Apple Pie

Ingredients
- 2 1/2 cups all-purpose flour
- 1 cup (2 sticks), cold unsalted butter
- 1/4 cup ice water
- 6 cups, peeled and sliced (Granny Smith and Honeycrisp mix) apples
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 cup, cut into small pieces unsalted butter
- 1, beaten egg
- 1 tbsp coarse sugar
Instructions
- Step 1: For crust: Pulse 2 1/2 cups all-purpose flour and 1/4 tsp salt in a food processor. Add 1 cup cold unsalted butter (cut into 1/2-inch cubes) and pulse until mixture resembles coarse crumbs. Gradually add 1/4 cup ice water, pulsing until dough forms.
- Step 2: Divide dough in half. Flatten each half into a disk, wrap in plastic, and refrigerate for at least 1 hour.
- Step 3: Preheat oven to 375°F. Roll out one disk of dough to fit a 9-inch deep-dish pie plate. Press dough into the plate, trimming excess.
- Step 4: In a large bowl, toss 6 cups apples (peeled and sliced) with 1/2 cup granulated sugar, 1/4 cup all-purpose flour, 1 tsp ground cinnamon, and 1/4 tsp ground nutmeg.
- Step 5: Spread apple mixture evenly into the pie crust. Dot with 1/4 cup unsalted butter (cut into small pieces).
- Step 6: Roll out the second disk of dough and place over the filling. Seal edges, trim, and cut slits. Brush with beaten egg and sprinkle with 1 tbsp coarse sugar.
- Step 7: Bake for 50-60 minutes until crust is golden and filling is bubbling. Let cool for 2 hours before serving.
