Ingredients
- 1, peeled and sliced diagonally mango
- 1, pitted and sliced diagonally avocado
- 1/2, thinly sliced red bell pepper
- 1/4 cup, thinly sliced red onion
- 2 tbsp lime juice
- 1 tbsp extra virgin olive oil
- 2 tbsp, chopped fresh cilantro
Instructions
- Step 1: Place 1 peeled and diagonally sliced mango, 1 pitted and diagonally sliced avocado, 1/2 thinly sliced red bell pepper, and 1/4 cup thinly sliced red onion in a large bowl. Gently toss to combine without mashing the avocado.
- Step 2: Whisk together 2 tbsp lime juice, 1 tbsp extra virgin olive oil, and 2 tbsp chopped cilantro in a small bowl until emulsified. Drizzle over salad and toss gently until evenly coated.
- Step 3: Serve immediately at room temperature. For best texture, assemble just before serving to prevent browning.
