Dill-Potato Pancakes with Smoked Salmon

Ingredients
- 1 lb potatoes
- 1/4 cup fresh dill
- 1/4 cup all-purpose flour
- 1 large egg
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 4 oz smoked salmon
- 2 tbsp sour cream
- 1 tbsp fresh dill
Instructions
- Step 1: In a large bowl, combine 1 lb peeled and grated potatoes, 1/4 cup finely chopped fresh dill, 1/4 cup all-purpose flour, 1 large beaten egg, 1/2 tsp salt, and 1/4 tsp black pepper; mix until evenly distributed.
- Step 2: Heat 1 tbsp olive oil in a large nonstick skillet over medium heat. Scoop 1/4 cup potato mixture into the skillet, press into a 1/2-inch-thick patty, and cook for 4-5 minutes per side until golden brown and crispy.
- Step 3: Heat the remaining 1 tbsp olive oil in a small skillet over medium-low heat, add 4 oz smoked salmon pieces, and cook for 2-3 minutes until warmed through.
- Step 4: Serve each potato pancake topped with 4 oz warm smoked salmon, 2 tbsp sour cream, and 1 tbsp chopped fresh dill.
