Dill-Roasted Chicken with Asparagus and Peas

- 4 bone-in, skin-on chicken thighs
- 2 tbsp olive oil
- 1 tbsp fresh dill
- 1 tsp garlic powder

- 1 lb asparagus
- 1 cup fresh peas
Instructions
- Step 1: Preheat oven to 400°F. Pat 4 bone-in, skin-on chicken thighs dry with paper towels. In a small bowl, mix 2 tbsp olive oil, 1 tbsp chopped fresh dill, 1 tsp garlic powder, 1/2 tsp onion powder, and salt and pepper.
- Step 2: Rub oil mixture evenly over chicken thighs, coating all sides.
- Step 3: Place chicken thighs in a single layer in a baking dish. Arrange 1 lb trimmed asparagus and 1 cup fresh peas around chicken.
- Step 4: Roast for 25-30 minutes, or until chicken is golden brown and internal temperature reaches 165°F, and asparagus is tender-crisp.
