- 2, sliced 1/2-inch thick bell peppers

- 1 cup cherry tomatoes
- 3 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp dried thyme
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 425°F (220°C). Toss 2 sliced zucchini, 2 sliced bell peppers, and 1 sliced red onion with 3 tbsp olive oil, 1 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp dried thyme, 1/4 tsp salt, and 1/4 tsp black pepper in a large bowl.
- Step 2: Spread vegetables in a single layer on a parchment-lined baking sheet. Roast for 15 minutes, then flip all vegetables using a spatula to ensure even browning.
- Step 3: Add 1 cup cherry tomatoes to the baking sheet, stirring to combine with the roasted vegetables. Return to oven and roast for 8-10 more minutes until tomatoes burst and vegetables are tender at edges but still hold shape.
- Step 4: Remove from oven and let rest for 5 minutes before serving. The tomatoes will release juices that create a natural glaze.
