Downtown Herb Chicken with Lemon-Dill Sauce

Ingredients
- 4 (6 oz each) chicken breasts, boneless and skinless
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1/2 tsp garlic powder
- 2 tbsp lemon juice
- 2 tbsp fresh dill, chopped
- 1/4 cup heavy cream
- 1 tsp lemon zest
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 400°F. Pat chicken breasts dry with paper towels. Rub with 2 tbsp olive oil, 1 tsp dried thyme, 1/2 tsp garlic powder, 1/2 tsp salt, and 1/4 tsp black pepper. Place on a parchment-lined baking sheet and roast for 20-22 minutes until internal temperature reaches 165°F and edges are golden.
- Step 2: While chicken cooks, whisk together 2 tbsp lemon juice, 2 tbsp chopped dill, 1/4 cup heavy cream, and 1 tsp lemon zest in a small saucepan. Heat over medium-low for 3 minutes until slightly thickened and bubbling around edges.
- Step 3: Remove chicken from oven, let rest for 5 minutes. Drizzle with warm lemon-dill sauce and serve immediately with extra dill for garnish.
