- 1 1/2 cups, finely crushed graham crackers
- 6 tbsp, melted unsalted butter
- 16 oz, room temperature cream cheese
- 1 cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 1/2 cup raspberry jam
- 1 tbsp lemon juice
Instructions
- Step 1: Preheat oven to 325°F (163°C). Mix 1 1/2 cups crushed graham crackers with 6 tbsp melted unsalted butter, pressing firmly into the bottom of a 9-inch springform pan to form a crust.
- Step 2: Beat 16 oz room-temperature cream cheese with 1 cup sugar and 1 tsp vanilla extract until smooth, about 2 minutes. Add 3 large eggs one at a time, mixing after each addition.
- Step 3: Mix in 1/2 cup sour cream and 1 tbsp lemon juice until fully incorporated, scraping down the bowl.
- Step 4: Pour half the batter into the crust and spread evenly. Dollop 1/2 cup raspberry jam over the top and gently swirl with a knife.
- Step 5: Pour remaining batter over the jam layer, then use a spoon to create a marble pattern. Bake for 55-60 minutes until the edges are set but center still jiggles slightly.
- Step 6: Turn off oven, crack the door open, and let cheesecake cool inside for 1 hour. Refrigerate uncovered for 4 hours before serving.
