- 1 cup extra-virgin olive oil
- 1/4 cup fresh thyme sprigs
- 1/4 cup fresh rosemary sprigs
- 1 tbsp lemon zest
Instructions
- Step 1: Place 1 cup extra-virgin olive oil in a small saucepan and gently heat over low heat until just warm to the touch (do not simmer).
- Step 2: Add 1/4 cup fresh thyme sprigs, 1/4 cup fresh rosemary sprigs, and 1 tbsp lemon zest to the warm oil, ensuring the herbs are submerged.
- Step 3: Simmer gently for 15 minutes, stirring occasionally, until the oil is fragrant and the herbs are softened but not browned.
- Step 4: Strain the oil through a fine-mesh sieve into a clean glass jar, pressing gently on the herbs to extract all oil, then discard the herbs.
