  2. Step 2: Add 1/4 cup fresh thyme sprigs, 1/4 cup fresh rosemary sprigs, and 1 tbsp lemon zest to the warm oil, ensuring the herbs are submerged.
  3. Step 3: Simmer gently for 15 minutes, stirring occasionally, until the oil is fragrant and the herbs are softened but not browned.
  4. Step 4: Strain the oil through a fine-mesh sieve into a clean glass jar, pressing gently on the herbs to extract all oil, then discard the herbs.
