Game-Over Guacamole with Crispy Tortilla Chips

Ingredients
- 2 avocado
- 1/4 cup red onion
- 1/2 cup tomato
- 1 lime
- 2 tbsp cilantro
- 1/4 tsp salt
- 8 corn tortillas
- 1 tbsp vegetable oil
Instructions
- Step 1: Cut both avocados in half, remove pits, and scoop flesh into a medium bowl. Add 1/4 cup minced red onion, 1/2 cup diced tomato, 1/4 cup chopped cilantro, and the juice of 1 lime. Season with 1/4 tsp salt and mash with a fork until mostly smooth but still slightly chunky.
- Step 2: Heat 1 tbsp vegetable oil in a small skillet over medium heat. Tear corn tortillas into 1-inch pieces, add to the skillet, and cook for 2-3 minutes per side until golden and crisp, turning frequently.
- Step 3: Serve the guacamole immediately with the crispy tortilla chips, garnished with extra cilantro if desired.
