Ganache-Stuffed Chocolate Cake

Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup, softened unsalted butter
- 1 cup granulated sugar
- 2 tsp vanilla extract
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup chocolate chips
- 1/2 cup heavy cream
Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- Step 2: Whisk 1 1/2 cups all-purpose flour, 1/2 cup unsweetened cocoa powder, 1 tsp baking powder, 1/2 tsp baking soda, and 1/4 tsp salt in a medium bowl.
- Step 3: Beat 1/2 cup softened butter and 1 cup granulated sugar in a large bowl until creamy. Add 2 tsp vanilla extract and 2 large eggs, beating until smooth.
- Step 4: Add the dry ingredients in three parts, alternating with 1 cup buttermilk, beginning and ending with dry ingredients. Mix until just combined.
- Step 5: Divide the batter evenly between the pans. Place 1/2 cup chocolate chips in the center of each pan, then cover with the remaining batter.
- Step 6: Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Step 7: Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
- Step 8: While cake cools, make ganache: heat 1/2 cup heavy cream in a small saucepan until simmering. Pour over 4 oz chopped semisweet chocolate and let sit for 5 minutes. Stir until smooth, then cool to room temperature.
