Garlic Braised Chicken Thighs with Crispy Garlic Chips

Ingredients
- 1.5 lbs, skin-on chicken thighs
- 2 tbsp olive oil
- 10, peeled garlic cloves
- 1/4 cup chicken broth
- 1 tbsp butter
- 2 tbsp all-purpose flour
- 1/4 cup grated parmesan
- 1/4 cup, chopped fresh parsley

Instructions
- Step 1: Pat 1.5 lbs chicken thighs dry with paper towels, then season both sides with salt and pepper.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add chicken thighs skin-side down and cook for 5 minutes until golden brown, then flip and cook for 3 minutes more.
- Step 3: Remove chicken and set aside. Add 10 peeled garlic cloves to the skillet and cook for 2 minutes until fragrant, stirring constantly.
- Step 4: Pour 1/4 cup chicken broth into the skillet, scraping up browned bits. Add 1 tbsp butter and 2 tbsp all-purpose flour, whisking until thickened (about 2 minutes).
- Step 5: Return chicken to skillet, nestling into sauce. Cover, reduce heat to low, and simmer for 20 minutes until chicken is cooked through.
- Step 6: For crispy garlic chips, heat 1 tbsp olive oil in a small skillet over medium heat. Add 2 minced garlic cloves and cook for 1 minute until golden and crispy, then transfer to a paper towel-lined plate.
- Step 7: Serve chicken with sauce, topped with 1/4 cup chopped parsley and crispy garlic chips.
