Garlic Sautéed Zucchini with Lemon Zest

- 2 medium zucchini
- 1 tbsp olive oil
- 2 cloves garlic
- 1 tsp lemon zest
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Thinly slice 2 medium zucchini lengthwise into 1/4-inch ribbons using a mandoline or sharp knife, then pat dry with paper towels.
- Step 2: Heat 1 tbsp olive oil in a large skillet over medium heat. Add 2 minced garlic cloves and sauté for 60 seconds until fragrant but not browned.
- Step 3: Add the zucchini ribbons to the skillet, season with 1/4 tsp salt and 1/8 tsp black pepper, and toss to coat.
- Step 4: Cook for 4-5 minutes, stirring occasionally, until zucchini is tender but still holds its shape and edges are slightly golden.
- Step 5: Remove from heat, stir in 1 tsp lemon zest, and serve immediately while hot.
