Gin-Botanical Herb Chicken with Vermouth Glaze

Ingredients
- 12 oz boneless skinless chicken thighs
- 2 tbsp gin
- 1 tbsp fresh thyme leaves
- 1 tsp, finely chopped fresh rosemary
- 3 tbsp dry vermouth
- 1 tbsp olive oil
- 1 tsp lemon zest
- 1/4 tsp kosher salt
- 1/8 tsp black pepper
Instructions
- Step 1: Pat chicken thighs dry with paper towels, then season evenly with 1/4 tsp kosher salt and 1/8 tsp black pepper.
- Step 2: In a small bowl, whisk together 2 tbsp gin, 1 tbsp thyme, 1 tsp chopped rosemary, and 1 tsp lemon zest. Rub mixture over chicken, cover, and refrigerate for 30 minutes.
- Step 3: Heat 1 tbsp olive oil in a skillet over medium-high heat until shimmering. Add chicken and sear for 4 minutes per side until golden brown and cooked through.
- Step 4: Reduce heat to low, pour in 3 tbsp dry vermouth, and simmer for 2 minutes until slightly reduced and glossy, spooning sauce over chicken frequently.
- Step 5: Transfer to a plate, let rest for 2 minutes, then serve with remaining glaze drizzled over top.
