- 1 cup, diced into 1/2-inch cubes zucchini
- 2 cloves, minced garlic
- 1 tablespoon, grated fresh ginger
- 2 tablespoons coconut aminos
- 1 tablespoon lime juice
- 2 cups cauliflower rice
Instructions
- Step 1: Heat 1 tablespoon avocado oil in a large skillet over medium-high heat (350°F). Add 1 pound ground beef, breaking it into small pieces with a wooden spoon, and cook for 5-6 minutes until no pink remains, stirring occasionally.
- Step 2: Add 1 cup diced bell peppers, 1 cup diced zucchini, and 2 minced garlic cloves. Sauté for 4-5 minutes until vegetables are tender-crisp and edges begin to brown.
- Step 3: Stir in 1 tablespoon grated fresh ginger, 2 tablespoons coconut aminos, and 1 tablespoon lime juice. Cook for 1 minute until fragrant and sauce thickens slightly.
