Ginger-Garlic Stir-Fried Zucchini and Carrots

- 12 oz zucchini
- 8 oz carrots
- 3 cloves garlic
- 1 tbsp fresh ginger
- 2 tbsp coconut aminos
- 1 tbsp avocado oil
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Heat 1 tbsp avocado oil in a large skillet over medium-high heat. Add 12 oz sliced zucchini and 8 oz julienned carrots, stir-frying 5 minutes until slightly tender.
- Step 2: Add 3 minced garlic cloves and 1 tbsp minced fresh ginger, stir-frying 1 minute until fragrant.
- Step 3: Stir in 2 tbsp coconut aminos, 1/4 tsp salt, and 1/8 tsp black pepper. Cook 2-3 minutes until vegetables are tender-crisp and sauce thickens slightly.
