Ginger-Peach Spiced Punch

Ingredients
- 2 cups peaches
- 2 tbsp ginger
- 1/4 cup honey
- 3 tbsp lemon juice
- 2 cups water
- 1/4 tsp chili flakes
- 4 cups sparkling water
- 2 cups ice cubes
- 6 peach slices
Instructions
- Step 1: In a saucepan, combine 2 cups chopped fresh peaches, 2 tablespoons grated fresh ginger, 1/4 cup honey, 3 tablespoons freshly squeezed lemon juice, and 2 cups water. Bring to a simmer over medium heat and cook for 10 minutes until peaches are tender.
- Step 2: Remove from heat and stir in 1/4 teaspoon hot chili flakes. Let cool to room temperature.
- Step 3: Strain the mixture through a fine-mesh sieve into a large pitcher, pressing with a spoon to extract all liquid and discarding solids.
- Step 4: Add 4 cups sparkling water to the pitcher and stir gently.
- Step 5: Chill the punch in the refrigerator for at least 2 hours.
- Step 6: Before serving, add 2 cups ice cubes and stir gently.
- Step 7: Pour into glasses and garnish each with 1 fresh peach slice.
