Ginger-Scented Asparagus Shrimp Sauté

Ingredients
- 1 pound shrimp
- 2 tablespoons avocado oil
- 12 ounces trimmed asparagus
- 3 cloves minced garlic
- 1 tablespoon grated ginger
- 2 tablespoons coconut aminos
- 2 sliced green onion
Instructions
- Step 1: Heat 1 tablespoon avocado oil in a large skillet over medium-high heat until shimmering.
- Step 2: Add 12 ounces trimmed asparagus pieces and cook for 3-4 minutes until crisp-tender and bright green, stirring occasionally.
- Step 3: Add 3 minced garlic cloves and 1 tablespoon grated ginger, and cook for 1 minute until fragrant, stirring constantly.
- Step 4: Add 1 pound peeled and deveined shrimp and cook for 3-4 minutes until pink and opaque, stirring occasionally.
- Step 5: Stir in 2 tablespoons coconut aminos and cook for 1 more minute until sauce thickens slightly.
- Step 6: Remove from heat and garnish with 2 sliced green onions.
