Ginger-Sesame Broccoli and Bell Pepper Stir-Fry

Ingredients
- 2 tbsp vegetable oil
- 1 medium, thinly sliced onion
- 2 cloves, minced garlic
- 1 tbsp, grated ginger
- 2 cups broccoli florets
- 1, thinly sliced red bell pepper
- 1 cup, sliced mushrooms
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1/4 cup water
- 1/4 cup, chopped peanuts
Instructions
- Step 1: Heat 2 tbsp vegetable oil in a large skillet over medium-high heat. Add onion and stir-fry for 2 minutes until softened, then add 2 minced garlic cloves and 1 tbsp grated ginger; cook 30 seconds until fragrant.
- Step 2: Add 2 cups broccoli florets, 1 sliced red bell pepper, and 1 cup sliced mushrooms; stir-fry for 5-6 minutes until vegetables are crisp-tender.
- Step 3: Whisk together 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sesame oil, and 1/4 cup water in a small bowl. Pour over vegetables, toss to coat, and cook 1 minute until sauce thickens. Sprinkle with 1/4 cup chopped peanuts before serving.
