Goya Stir-Fry with Shrimp and Tofu

Ingredients
- 1 medium (about 8 oz) bitter melon
- 8 oz, peeled and deveined shrimp
- 1/2 block (7 oz), pressed and cubed firm tofu
- 2 tbsp sesame oil
- 2 cloves, minced garlic
- 1 tbsp soy sauce
- 1 tsp mirin
- 1/4 tsp sugar
Instructions
- Step 1: Cut bitter melon lengthwise, remove seeds, and slice into 1/4-inch thick strips; rinse under cold water for 5 minutes to reduce bitterness, then pat dry.
- Step 2: Heat 1 tbsp sesame oil in a large skillet over medium-high heat. Add bitter melon and stir-fry for 3 minutes until slightly softened, then transfer to a plate.
- Step 3: Add remaining 1 tbsp sesame oil to the skillet. Sauté shrimp for 2 minutes until pink, then add garlic and stir for 30 seconds until fragrant.
- Step 4: Return bitter melon to the skillet, add tofu, soy sauce, mirin, and sugar. Toss gently for 3 minutes until heated through and flavors meld.
