  1. Step 1: Cut bitter melon lengthwise, remove seeds, and slice into 1/4-inch thick strips; rinse under cold water for 5 minutes to reduce bitterness, then pat dry.
  2. Step 2: Heat 1 tbsp sesame oil in a large skillet over medium-high heat. Add bitter melon and stir-fry for 3 minutes until slightly softened, then transfer to a plate.
  3. Step 3: Add remaining 1 tbsp sesame oil to the skillet. Sauté shrimp for 2 minutes until pink, then add garlic and stir for 30 seconds until fragrant.
  4. Step 4: Return bitter melon to the skillet, add tofu, soy sauce, mirin, and sugar. Toss gently for 3 minutes until heated through and flavors meld.
