Grilled Barramundi with Lemon and Fresh Herbs

Ingredients
- 2 (150g each) barramundi fillets
- 1 tablespoon olive oil
- 1, zested and juiced lemon
- 2 tablespoons, finely chopped fresh parsley
- 1 tablespoon, finely chopped fresh dill
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Step 1: Preheat grill pan over medium-high heat and brush with 1/2 tablespoon olive oil to prevent sticking.
- Step 2: Season both sides of 2 (150g) barramundi fillets with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Step 3: In a small bowl, mix 1/2 tablespoon olive oil, 1 tablespoon lemon juice, 1 teaspoon lemon zest, 2 tablespoons fresh parsley, and 1 tablespoon fresh dill; brush evenly over fillets.
- Step 4: Place fillets on preheated grill pan and cook for 5-7 minutes per side, until fish is opaque and flakes easily with a fork.
- Step 5: Squeeze additional lemon juice over top before serving.
