Grilled Lemon-Dill Sea Bass with Preserved Lemon Salsa

Ingredients
- 4 (6 oz each) sea bass fillets
- 1, zested and juiced lemon
- 2 tbsp, chopped dill
- 2, finely chopped preserved lemon
- 1 tbsp olive oil
- 1 clove, minced garlic
- 1/4 tsp red pepper flakes
Instructions
- Step 1: Mix 1 tbsp olive oil, 1/2 of the lemon zest, 1 minced garlic clove, 1/4 tsp red pepper flakes, and 1 tbsp chopped dill in a small bowl. Rub evenly over both sides of 4 sea bass fillets.
- Step 2: Preheat grill to medium-high (375°F). Place fillets skin-side down on grill, cook for 4 minutes without moving.
- Step 3: Flip fillets, brush with remaining lemon zest and 1 tbsp lemon juice, and cook for 3-4 minutes until opaque and easily flaked with a fork.
- Step 4: While fish cooks, combine 2 chopped preserved lemons, remaining dill, and 1 tbsp lemon juice in a bowl. Stir gently to combine.
- Step 5: Serve fish topped with preserved lemon salsa and a sprinkle of remaining lemon zest.
