Grilled Lemon-Garlic Salmon with Cherry Tomatoes and Asparagus

Ingredients
- 4 (6 oz each) salmon fillets
- 2 tbsp olive oil
- 2, zested and juiced lemon
- 4 cloves, minced garlic
- 1 cup, halved cherry tomatoes
- 1 bunch, trimmed and cut into 2-inch pieces asparagus
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp, chopped fresh dill
Instructions
- Step 1: Preheat grill to medium-high heat (375°F). In a small bowl, whisk together 2 tbsp olive oil, 2 lemons (zested and juiced), 4 minced garlic cloves, 1/4 tsp salt, and 1/4 tsp black pepper until well combined.
- Step 2: Place 4 salmon fillets (6 oz each) on a plate and brush with half the lemon-garlic mixture, letting them rest for 5 minutes while preparing vegetables.
- Step 3: Thread 1 cup halved cherry tomatoes and 1 bunch trimmed asparagus (cut into 2-inch pieces) onto skewers, then brush with the remaining lemon-garlic mixture and season with an extra pinch of salt and pepper.
- Step 4: Grill salmon for 6-7 minutes per side until opaque and easily flaked, transferring to a plate. Grill vegetables for 5-6 minutes, turning once, until tender-crisp with slight char marks.
- Step 5: Arrange grilled salmon on a plate, top with grilled vegetables, and sprinkle with 2 tbsp chopped fresh dill.
