Grilled Tomato and Smoked Pepper Salad with Lemon Vinaigrette

Ingredients
- 4 medium, sliced into 1/2-inch thick rounds tomatoes
- 2 medium (any color), sliced into strips bell peppers
- 2 tbsp, divided olive oil
- 1/2 tsp smoked paprika
- to taste salt
- to taste black pepper
- 4 cups mixed salad greens
- 1/4 cup, thinly sliced red onion
- 1/4 cup fresh, chopped parsley
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
Instructions
- Step 1: Preheat grill to medium-high. Brush tomato slices and pepper strips with 1 tbsp olive oil, sprinkle with smoked paprika, salt, and pepper. Grill for 3-4 minutes per side until char marks appear and vegetables are tender.
- Step 2: In a small bowl, whisk together 3 tbsp olive oil, 1 tbsp lemon juice, 1 tsp Dijon mustard, 1/2 tsp honey, salt, and pepper to make the dressing.
- Step 3: Toss grilled vegetables with mixed salad greens, red onion, and parsley in a large bowl. Drizzle with dressing and toss gently to coat. Serve immediately.
