- 12 oz ground beef
- 1 tbsp avocado oil
- 1, thinly sliced red bell pepper
- 1 medium, julienned zucchini
- 2 cloves, minced garlic
- 2 tbsp coconut aminos
- 1 tbsp lime juice
- 2 tbsp, chopped fresh cilantro
Instructions
- Step 1: Heat 1 tbsp avocado oil in a large skillet over medium-high heat until shimmering. Add 12 oz ground beef and 2 minced garlic cloves, breaking it into small crumbles with a wooden spoon until no longer pink (5-6 minutes), then drain excess fat.
- Step 2: Add 1 sliced red bell pepper and 1 julienned zucchini to the skillet, stirring constantly to coat in the beef fat until vegetables are crisp-tender (4-5 minutes).
- Step 3: Reduce heat to low, stir in 2 tbsp coconut aminos and 1 tbsp lime juice, simmering for 2 minutes until the sauce glazes the beef and vegetables. Remove from heat and stir in 2 tbsp chopped cilantro until fragrant.
