- 1 cup corn
- 1/2 red bell pepper
- 1/4 cup red onion
- 1/4 cup cilantro
- 2 lime
- 1 tbsp olive oil
- 1/2 tsp cumin
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Dice 1/2 red bell pepper and finely chop 1/4 cup red onion, then combine with 8 oz cooked shrimp (peeled and deveined) in a large bowl.
- Step 2: In a small bowl, whisk 2 limes (zested and juiced), 1 tbsp olive oil, 1/2 tsp ground cumin, 1/4 tsp salt, and 1/4 tsp black pepper until smooth.
