Harissa-Spiced Chicken with Roasted Apple Slices

- 1.5 pounds chicken thighs
- 3 tablespoons harissa paste
- 2 tablespoons olive oil
- 4 medium apples
- 2 minced shallots
- 1 cup chicken broth
- 1 tablespoon chopped fresh thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Step 1: Preheat oven to 400°F. Pat chicken thighs dry with paper towels, then rub with 2 tbsp olive oil, 3 tbsp harissa paste, 1 tsp salt, and 1/2 tsp black pepper. Arrange in a single layer on a parchment-lined baking sheet.
- Step 2: Core and slice apples into 1/4-inch thick wedges. Toss with 1 tbsp olive oil, 1/2 tsp salt, and 1 minced shallot. Scatter around chicken on the baking sheet.
- Step 3: Roast for 25-30 minutes until chicken reaches 165°F internally and apples are golden at the edges, basting once halfway with 1/4 cup chicken broth.
- Step 4: Remove chicken and apples from oven. Sprinkle with 1 tbsp chopped thyme and let rest for 5 minutes before serving.
